CHICKEN TENDERS AND LOADED MASH๐Ÿ—

I'm getting hungry just looking at this photo! So a favorite meal I like to order at Chili's is the Chicken Crispers with Loaded Mash (minus the bacon because I do not eat beef/pork), and Fries. So here I recreated that meal and it does not disappoint! Read on to see how to recreate this meal!


Ingredients for Chicken Tenders:

๐Ÿ— A pack of Chicken Tenderloins (you can choose the amount of chicken tenders you are going to make)

๐Ÿ—1 Cup Plain Panko Crumbs (you might need more Panko based on the amount of tenders)

๐Ÿ—4-5 Eggs

๐Ÿ—1/4 C Milk

๐Ÿ—3/4 TSP Salt, Black Pepper, Kickin Chicken, Onion Powder, Garlic Powder, Paprika, Cayenne Pepper, Parsley Flakes, Adobo

๐Ÿ—1- 1 1/2 C Flour (depending on how many tenders you make will depend on the amount of flour needed) I usually make around 12-15 Tenders

๐Ÿ—Vinegar*

๐Ÿ—Oil of your choice


Steps:

1. Choose your amount of Chicken Tenderloins, put them in a bowl and wash them with cold water and a splash of vinegar. Re-rinse chicken in cool water for a second time. Then pat dry.

2. Season the Chicken with the seasonings above.

3. Next, In one dish add your flour, and in another dish make the egg mixture (combine the eggs and milk for the batter).

4. In another dish, add the Panko Crumbs, 1 TSP Kickin Chicken Seasoning, 1/2 TSP Paprika, Black Pepper and Parsley

5. In a frying pan, add cooking oil to fill about 1/4-1/2 of the depth of the pan. Let it heat for about 3-5 minutes.

6. To make the Chicken Tenders juicy and tender, I double dredge my tenders. Meaning, I do the coating process 2 times and then fry it.

7. Take the Tender, dip it into Flour, then the Egg mixture ( repeat that twice in a row) Then into the Panko

after the second egg coating.

8. Fry in the oil until golden brown. Flip sides to ensure even cooking. 

9. Keep going until you are finished! Then you can enjoy with your choice of sauce! Here I used Kraft Honey Mustard!

Ingredients for Loaded Mashed Potatoes:

๐Ÿฅ”Instant Mashed Potato Mix (or you can peel and boil potatoes, totally unto you)

๐Ÿฅ”1 2/3- 2 Cups of Boiling Water

๐Ÿฅ”3/4 C Milk

*The Seasoning depends on the amount of Mashed Potatoes you decide to make 

๐Ÿฅ”1 TSP Salt, Black Pepper, Adobo, Garlic Powder, Onion Powder, Parsley Flakes

๐Ÿฅ” 1-2 Stalks of Green Onions

๐Ÿฅ”1/2 C Shredded Sharp Cheddar Cheese

๐Ÿฅ”Optional- 1/3 C Melt Butter

๐Ÿฅ” Optional, you can add bacon bits if you'd like


Steps:

1. Add about 2-2 1/2 Cups Instant Mashed Potato Mix into a large mixing bowl.

2. Next add in your seasonings.

3. Add in your hot water, and then using a hand mixer, put it on low speed and combine the seasoning, water and mashed potato mix.

4. Now that all of those components are mixed, add in your Milk (and butter if you choose to do so).

5. Now turn your mixer on high speed, and whip your potatoes until it gets to a fluffy whipped consistency!

6. Adding in the green onions and cheese, use a rubber spatula or spoon to fold them into the mashed potatoes.

7. All done enjoy!
